Chocolate Lava Cakes

I have just started a bio research class that is everyday from 9-5, so I do not a lot of time to do much cooking. So, I have resorted to baking at night. Tonight, I made a lava cake recipe that I have been perfecting for years. This recipe has been very frustrating to make the way I wanted. Hearing from my siblings and parents, I have finally successfully made it perfect. The changes I made to the original recipe were not putting baking powder and also decreasing the baking time to 11 minutes. This made a huge difference. These lava cakes were the first recipe I knew I was going to include in my cookbook. It is a family favorite, and only takes 6 ingredients to make. Serves 6 people and takes 25 minutes to make.  

Recipes:

6 oz semi sweet chocolate 

¾  cup butter 

1 egg 

1 egg yolk 

2 tbsp sugar 

2 tbsp flour

Preheat oven to 450 degrees F 

Grease 6 small ramekins with butter, and then sprinkle sugar inside on all sides 

In a medium sized bowl, melt the chocolate with the butler, you can use a double boiler 

or the microwave.  

Next, in another medium bowl, whisk the eggs and the sugar until pale yellow 

Fold in the chocolate into the egg mixture 

Fold in the flour into the batter 

Place in greased ramekins and bake for 10-12 minutes  

Serve with whipped cream or powdered sugar and enjoy
